Roasted Cod with Cherry Tomatoes and Mozzarella
SERVES 1
1 cod fillet, skinned
Olive oil
A handful of cherry tomatoes, halved A handful of fresh basil leaves, chopped
1 ball of mozzarella, thinly sliced 1 tbsp Parmesan, grated
Salt and pepper
To serve:
New potatoes Green vegetables 1 Preheat the oven to 200°C/180°C fan/gas mark 6. Place the cod fillet in a shallow, ovenproof dish. Drizzle with a little olive oil and season.
2 Place the tomato halves, basil leaves and mozzarella slices on top of the fish, then top with the Parmesan and bake for 12-16 minutes, until golden. Serve with new potatoes and green vegetables.
