Spiced Fish Kebabs
SERVES 4
Zest and juice of 1 lemon 1 tsp ground black pepper 1 tsp paprika
½ tsp ground turmeric
½ tsp ground coriander
½ tsp ground cumin
600g firm white fish, cubed
To serve:
Green salad
Combine the lemon zest and juice with the black pepper, paprika, ground turmeric, coriander and cumin until you have a paste.
2 Add the chopped fish and toss to coat. Leave to marinate in the fridge for 1-2 hours if possible. Meanwhile, soak wooden skewers in water to prevent burning.
3 Preheat the grill or barbecue to medium-high. Thread the fish onto the skewers and grill for four minutes per side, or until cooked through. Serve with a green salad.
