Beans, Sausage and Vegetable Pie
SERVES 6-8
2 tbsp vegetable, olive or sunflower oil
225g pork sausages 4 garlic cloves, sliced 1 onion, chopped
1 red pepper, chopped
1 x 400g tin of Heinz Baked Beans 1 tsp dried tumeric, basil, oregano, or any other herb in the press 2 tbsp Heinz Ketchup
5 potatoes, boiled
50ml milk
50g butter
1 Gently heat the oil in a large frying pan over a moderate heat.
2 Add the sausages and cook for four minutes, then add the garlic, onion and red peppers.
3 Meanwhile, heat the beans in a separate saucepan and stir in the herbs and ketchup, mixing thoroughly until warm – do not overheat!
4 Add the butter and stir until heated through.
5 Pour the bean mixture into the frying pan over the sausages and vegetables. Mix through and transfer to an ovenproof dish.
6 Mash the potatoes with the milk and butter. Add herbs if desired.
7 Place the mash on top of the bean vegetable mixture and smooth out with a fork.
8 Place in a preheated oven at 200˚C/180˚C fan/gas mark 6 for 10 minutes.
9 Remove from oven and place a sprig of parsley on top. Leave to stand for five minutes. Serve and enjoy!
