Honey-Mustard Chicken Thighs
8-10 chicken thighs
4 tbsp wholegrain mustard 4 tbsp clear honey
Salt and black pepper
Mashed potatoes 1 Preheat the oven to 180°C/160°C fan/gas mark 5.
2 In a large bowl, mix together the mustard, honey and seasoning. Add the chicken thighs and toss to coat. Arrange the chicken in a single layer in a roasting tin.
3 Cook for 25-30 minutes, basting with the juices once or twice throughout, until cooked through and the juices run clear. Serve with mashed potatoes.
