Honey-Mus­tard Chicken Thighs

SERVES 4

8-10 chicken thighs

4 tbsp whole­grain mus­tard 4 tbsp clear honey

Salt and black pep­per

To serve:

Mashed pota­toes 1 Pre­heat the oven to 180°C/160°C fan/gas mark 5.

2 In a large bowl, mix to­gether the mus­tard, honey and sea­son­ing. Add the chicken thighs and toss to coat. Ar­range the chicken in a sin­gle layer in a roast­ing tin.

3 Cook for 25-30 min­utes, bast­ing with the juices once or twice through­out, un­til cooked through and the juices run clear. Serve with mashed pota­toes.
