Quick Macaroni Cheese
SERVES 6
250g macaroni
400g Cheddar, grated 2 large eggs
350ml milk
Salt and black pepper 2 tbsp fresh parsley, chopped 1 Preheat the oven to 180°C/160°C fan/gas mark 4. Lightly grease a large ovenproof dish.
2 Cook the macaroni in boiling salted water according to the packet instructions. Drain and layer one-third of the pasta on the bottom of the dish. Top with one-third of the cheese, repeat the layers again, then top with the last of the pasta and reserve the last third of the cheese.
3 Whisk together the eggs, milk and seasoning and pour the mixture over the pasta.
4 Cover and bake for 45 minutes, then uncover and sprinkle with the remaining cheese. Return to the oven for 4-5 minutes until the cheese has melted and the top is golden. Scatter the chopped parsley over the top and serve immediately.
