Three Bean Salad with Mint Dressing
SERVES 4
1 large bunch spring onions
2 garlic cloves, crushed
2 x 400g tins of mixed beans, drained 6 tbsp olive oil
2 tbsp white wine vinegar
A handful of chopped mint 1 Finely chop the spring onions and put into a bowl with the garlic. Stir in the beans.
2 Whisk the olive oil with the white wine vinegar and add plenty of seasoning. Stir through the salad with plenty of chopped mint.
