Citrus and Cherry Omega-3 Cookies
MAKES 24
30g ground almonds (or coconut flour can be used if person has a nut allergy; coconut is a fruit) 75g butter, melted
112g honey
1 tbsp ground flaxseed
Butter for greasing
3 eggs
Zest of 3 oranges
Zest of 3 lemons
Juice of 1 orange
60g chewy dried cherries 2 tbsp sugar-free marmalade A pinch of salt 1 Preheat oven to 175˚C/155˚C fan/gas mark 3.
2 Combine all the ingredients in a bowl and leave to stand for three minutes.
3 Put dessertspoon-sized amounts of the mixture onto a greased baking tray.
4 Bake for 15-20 minutes, or until the cookies are set and have begun to turn golden brown.
