Wheat-Free Chicken and Broccoli Noodles
SERVES 2
75g soba noodles
1 tsp sunflower oil
2 chicken breasts, cut into thin strips
200g broccoli, cut into florets 1 tbsp soy sauce
2 tbsp sweet chilli sauce
100g beansprouts
1 red chilli, de-seeded and finely chopped
4 spring onions, thinly sliced 2 tsp sesame seeds, toasted 1 Cook the noodles in a large pan of water, according to the packet instructions. Drain and set aside.
2 Meanwhile, heat the oil in a wok or large, non-stick frying pan and stir-fry the chicken until golden and cooked through. Add the broccoli and stir-fry for a further two minutes.
3 Mix together the soy sauce, sweet chilli sauce and two tablespoons of water. Add to the wok and, once bubbling, stir in the beansprouts and chilli. Cook for a minute or so until the beansprouts are heated through.
4 Add the noodles to the pan with the spring onions and sesame seeds. Stir together and serve immediately.
