Gluten-Free Caramel Popcorn Clusters
SERVES 12
225g butter
440g brown sugar 120ml golden syrup ½ tsp salt
½ tsp baking soda 1 tsp vanilla extract 225g popcorn 1 Preheat the oven to 110°C/90°C fan/gas mark 1/4. Melt the butter in a saucepan over a medium heat. Stir in the sugar, golden syrup and salt. Bring to the boil, stirring constantly, then boil without stirring for 3-4 minutes.
2 Remove from the heat, stir in the baking soda and vanilla and pour over the popcorn.
3 Bake in a shallow dish for an hour, stirring regularly. Leave to cool, then break into pieces.
