Spicy Quesadilla­s

250g leftover roast chicken or turkey, shredded

3-4 tbsp mild or spicy salsa 1 tbsp fresh coriander, chopped

1 tbsp extra-virgin olive oil 4 flour tortillas

200g mature red cheddar, grated

2 spring onions, chopped 1 Preheat the grill to medium-high. In a small saucepan, combine the chicken, salsa and coriander over a medium-low heat, stirring regularly. 2 Heat half of the oil in a frying pan over medium-high heat. Add one of the tortillas and toast for 30 seconds, then flip and cook the other side for another 30 seconds.

3 Top with half of the chicken mixture, half of the spring onions and cheese. Cover with another tortilla and grill for 3-4 minutes until heated through. Repeat with the remaining tortillas and chicken mixture. Serve immediatel­y, cut into wedges.
