Peppermint and Chocolate Sweets
MAKES 20 APPROXIMATELY
350g icing sugar, plus extra for shaping
1 egg white
4 drops peppermint essence 4 drops green food colouring 125g plain chocolate 1 Place the icing sugar, egg white, drops of peppermint flavouring and drops of green food colouring in a bowl.
2 Knead the mixture for a few minutes until it forms a smooth ball.
3 Form the mixture into a sausage shape, slice into rounds and place on a board to dry.
4 Melt the chocolate in a small bowl.
5 Dip the dry peppermints into the melted chocolate until they are half covered.
6 Place the chocolate-dipped peppermints on a foil-covered tray to set.
