Aubergine Parmesan
SERVES 4
450g aubergines, sliced lengthways 4 tbsp olive oil
300ml passata with extra herbs 2 garlic cloves, crushed
115g Parmesan, grated
Salt and black pepper
1 Preheat the grill. Brush the aubergines with some oil and season to taste. Arrange the slices in a single layer (in batches if needed) and grill for 4-5 minutes until golden and tender.
2 Preheat the oven to 190°C/170°C fan/gas mark 5. Spoon a little passata into the bottom of an ovenproof dish, then arrange a layer of aubergine slices on top. Add some of the crushed garlic and Parmesan cheese.
3 Repeat the layers of passata, aubergine, garlic and grated Parmesan, finishing with a good sprinkling of Parmesan.
4 Bake for 20-25 minutes, until the cheese is golden and the sauce is bubbling.
