Slow-Baked Vanilla Rice Pudding
SERVES 3-4
600ml milk
1 tsp vanilla extract
25g caster sugar
A pinch of ground nutmeg 60g pudding rice 1 Preheat the oven to 170°C/150°C fan/gas mark 3.
2 Heat the milk over a medium heat until simmering, then add the vanilla extract and leave the flavour to infuse for 20 minutes, stirring occasionally.
3 Mix together the caster sugar, ground nutmeg and pudding rice, then place in a shallow, oven-proof dish.
4 Pour the milk over the rice, stir well and bake for 1-1 hours, stirring halfway through cooking.
