Spicy Prawn Stew

Easy Food Special - - TAKE 5 -

SERVES 4

675g new pota­toes, washed (and halved, if needed)

30g fresh co­rian­der

350g jar of tomato sauce

1 tsp chilli flakes, crushed (or to taste) 300g cooked and peeled prawns 1 Cook the pota­toes in a pot of boil­ing water for 15 min­utes un­til ten­der. Drain and re­turn to the pan.

2 Finely chop half the co­rian­der and add to the pan with the tomato sauce, chilli flakes and 5-6 ta­ble­spoons of water.

3 Bring to the boil, re­duce the heat and leave to sim­mer for 5-6 min­utes, stir­ring oc­ca­sion­ally.

4 Stir in the prawns and heat briefly un­til they are warmed through (do not over­cook or they will be­come tough). Spoon into shal­low bowls and serve topped with the re­main­ing co­rian­der.
