Spicy Prawn Stew
675g new potatoes, washed (and halved, if needed)
30g fresh coriander
350g jar of tomato sauce
1 tsp chilli flakes, crushed (or to taste) 300g cooked and peeled prawns 1 Cook the potatoes in a pot of boiling water for 15 minutes until tender. Drain and return to the pan.
2 Finely chop half the coriander and add to the pan with the tomato sauce, chilli flakes and 5-6 tablespoons of water.
3 Bring to the boil, reduce the heat and leave to simmer for 5-6 minutes, stirring occasionally.
4 Stir in the prawns and heat briefly until they are warmed through (do not overcook or they will become tough). Spoon into shallow bowls and serve topped with the remaining coriander.
