Apple Crumpets

MAKES 12

4 cooking apples, peeled, cored and sliced

3 tbsp caster sugar

30ml water

75g self-raising flour

A pinch of salt

90ml milk

1 egg

50g butter 1 In a saucepan, add the apples and two tablespoon­s of caster sugar and the water. Place saucepan on a medium heat and simmer, stirring constantly, until the apples have softened and the water has evaporated. Remove from the heat and set aside to cool.

2 Sift the flour into a large bowl, add the remaining sugar and a pinch of salt and stir together.

3 In another bowl, whisk the egg and milk together.

4 Make a well in the centre of the flour and pour half of the beaten egg mixture into it. Mix together until smooth, then add the remaining liquid and again mix until smooth.

5 Stir in the apple purée to this mix.

6 Heat a large frying pan over medium heat and add a knob of butter.

7 Using tablespoon­s of batter at a time, cook in batches for a few minutes on each side, until cooked through. Transfer to a wire rack to cool.
