Banana, Honey and Oat Muffins

MAKES 12

280g self-raising flour 1 tsp baking powder

1 tsp ground cinnamon 130g brown sugar

150g rolled oats

90g butter, melted 2 eggs

125g natural yoghurt 2 medium ripe bananas, peeled and mashed 1 Preheat oven to 180°C/160°C fan/gas mark 4. Line a muffin tin with paper cases.

2 In a large bowl, whisk together the flour and baking powder. Stir in the cinnamon, brown sugar and almost all of the oats.

3 In a separate bowl, whisk together the melted butter, eggs and natural yoghurt until smooth. Stir in the mashed banana.

4 Pour this mixture into the flour mixture and stir well until it is all combined.

5 Divide the mixture into the paper cases, leaving a little room at the top.

6 Sprinkle a few of the remaining oats onto each of the muffins.

7 Bake in the oven for 20 minutes, until the muffin springs back when lightly pressed with your finger or when a toothpick (or tip of a knife) inserted into the centre comes out clean.

8 Leave to cool in the muffin tin before removing them to a wire rack.
