Roast Cod with Lemon and Olives
SERVES 4
900g cod, halibut or other white fish 180ml dry white wine
20-25 black olives
Zest of 1 lemon
1 tbsp olive oil
¼ tsp crushed chillies
A handful of fresh parsley, chopped Salt and black pepper
To serve:
New potatoes Green vegetables 1 Preheat the oven to 200°C/gas mark 6.
2 Place the fish into a shallow, ovenproof dish or small roasting pan. Pour in enough white wine (approximately 180ml) to half cover the fish, then add the olives and lemon zest.
3 Drizzle over the olive oil, then season with the crushed chillies, salt and pepper.
4 Roast the fish in the oven for approximately 18-20 minutes, until it is cooked through and flakes easily. Remove from the oven and sprinkle with the parsley. Serve with the cooking juices spooned over the fish.
