Mini Pinwheel Sandwiches
SERVES 1
2 slices of fresh square brown bread
For the toppings:
50g shredded chicken, such as Green Farm Torn Chicken Breast 1 tsp cranberry sauce
½ carrot, grated
2 tsp cream cheese
4 black grapes
4 green grapes
To serve:
1 small bunch of black grapes, about 6-8 grapes 1 Remove the crusts from the bread. Don’t throw them away; instead, they can be used for breadcrumbs for another recipe.
2 Flatten the bread with a rolling pin.
3 Add your toppings.
4 Roll the bread lengthwise, keeping all the ingredients together. Pack tightly while rolling.
5 Cut each roll into four wheels and serve.
