Ronan’s Cajun Invasion Sambo
SERVES 2
4 slices good-quality Irish black pudding
2 good-quality ciabatta rolls 50ml mayonnaise
¼ tsp cayenne pepper, to taste 1 packet of Green Farm Torn Cajun Chicken
1 red onion, very thinly sliced 2 ripe vine tomatoes, thickly sliced
2 tbsp balsamic vinegar
Salt and black pepper
200g extra-mature Irish Cheddar, grated
1 packet of rocket 1 Grill four slices of the black pudding in a frying pan over a medium heat until cooked through.
2 Cut open the ciabatta rolls and grill until toasted, on the inside only.
3 Mix the mayonnaise and cayenne pepper until combined.
4 Spread the mayonnaise mixture over the toasted bread bases and top with the black pudding, plenty of torn chicken, and some thinly sliced red onion – as thin as you dare!
5 Add a few slices of tomato on top of each and brush lightly with balsamic vinegar. Season with salt and pepper.
6 Top liberally with the Cheddar and grill until bubbly and oozy.
7 Remove from the grill and add fresh rocket.
8 Place the other half of the rolls on top of each sandwich and cut into two triangles (triangles always taste better!).
9 Try to fit it in your mouth and wash it down with a nice cup of sweet tea! Bliss!
