HOMEMADE BAKED BEANS
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
400g/14oz tinned cannellini beans 400g/14oz tinned chopped tomatoes
1 tbsp tomato purée (tomato paste) 1 tsp smoked paprika
1 tbsp dark brown sugar
60ml/2 fl oz/¼ cup red wine vinegar Salt and pepper
1 Heat the oil in a large pan over a medium heat. Add the onion and garlic and stir for 4-5 minutes until the onion is softened.
2 Add all of the other ingredients and season well with salt and pepper.
3 Reduce the heat and simmer, uncovered, for 10-15 minutes until the sauce has reduced slightly. Serve with toast.
