HOME­MADE BAKED BEANS

Serves 4

Easy Food Special - - A HEARTY START -

1 tbsp olive oil

1 onion, finely chopped

2 gar­lic cloves, crushed

400g/14oz tinned can­nellini beans 400g/14oz tinned chopped toma­toes

1 tbsp tomato purée (tomato paste) 1 tsp smoked pa­prika

1 tbsp dark brown sugar

60ml/2 fl oz/¼ cup red wine vine­gar Salt and pep­per

To serve:

Toast

1 Heat the oil in a large pan over a medium heat. Add the onion and gar­lic and stir for 4-5 min­utes un­til the onion is soft­ened.

2 Add all of the other in­gre­di­ents and sea­son well with salt and pep­per.

3 Re­duce the heat and sim­mer, un­cov­ered, for 10-15 min­utes un­til the sauce has re­duced slightly. Serve with toast.
