QUICK DUBLIN CODDLE
Serves 4-6
8 pork sausages
4 bacon rashers (back bacon), trimmed and halved
8 new potatoes, halved
2 carrots, peeled and sliced thickly 2 red onions, peeled and quartered Water, to cover
Salt and black pepper
A large handful of fresh parsley, chopped
1 In a large saucepan, add the sausages, rashers, potatoes, carrots and onions.
2 Add enough water to the saucepan to cover the ingredients. Season with salt and pepper.
3 Cover the pot and place over a high heat. Bring to the boil, then reduce the heat and simmer for 20-30 minutes or until the potatoes are tender and the sausages are cooked.
4 Stir in the parsley and serve hot.
