TRADITIONAL IRISH COFFEE
Makes 1
30ml/1 fl oz/2 tbsp Irish whiskey 2 tsp soft brown sugar
Strong black coffee
1 tbsp lightly whipped cream 1 tsp cocoa powder
1 Warm a medium-size wine glass or coffee glass with boiling hot water from the kettle. Swirl it around and leave to sit for one minute.
2 Pour out the water and add the whiskey, sugar and coffee. Stir well for 30 seconds to make sure that the sugar is dissolved.
3 Very gently, pour the whipped cream over the back of a spoon onto the coffee, leaving a little space at the top. Spoon some extra whipped cream on top and sieve over the cocoa powder.
4 Don’t be tempted to stir! Just sit back and enjoy.
