HOW TO CHOP FRESH HERBS

FOR BASIL, pile the leaves on top of one another and roll into a loose log. Hole the pile at one end and slice into fine ribbons. Do this right before you're ready to use, as cut basil may wilt.

FOR THYME AND ROSEMARY, use your fingers to peel off the leaves from the stems. Gather into a pile and chop finely.

FIRST, rinse your herbs and dry with some kitchen paper (paper towels). Make sure your knife is sharp and the cutting board is clean and completely dry.

FOR PARSLEY, MINT AND CORIANDER (CILANTRO), gather the whole bunch into your hand and use a knife to slice off the leaves. Roll the leaves into a bunch and chop.
