ORANGE GLAZED BACON

Serves 6

1kg/35oz/2.2lb loin of bacon 300g/11oz/1 cup orange marmalade 1 tbsp lemon juice

2 tbsp mustard powder

1 bunch of asparsgus, trimmed 300g/11oz/0.7lb carrots, peeled and sliced into long strips

Salt and black pepper

A handful of fresh parsley leaves, finely chopped

1 Place the bacon in a large saucepan and cover with cold water. Bring to the boil, then reduce the heat and simmer for one hour until tender, skimming off any white froth that collects at the top of the water.

2 Preheat the oven to 180˚C/160˚C fan/350˚F/gas mark 4. Whisk together the marmalade, lemon juice and mustard powder. Place the bacon in a baking dish and brush over most of the glaze.

3 Toss the remaining glaze with the asparagus and carrots. Season with salt and pepper and arrange in the bottom of the dish.

4 Bake for 30 minutes, basting the bacon occasional­ly with the glaze. Leave it to stand for 10 minutes before slicing.

5 Transfer the asparagus and carrots to a serving dish and toss with the parsley. Serve warm with the bacon.
