POTTED PRAWNS
Serves 4
2 garlic cloves, crushed
250g/8oz/½lb clarified butter, melted, plus extra for the top
4 tsp fresh thyme leaves, chopped 450g/16oz/1lb cooked prawns (shrimp), peeled
Juice of 2 lemons
Salt and black pepper
To serve:
Crusty bread or crackers
1 Combine the garlic, clarified butter and thyme in a saucepan over a high heat. Bring to the boil, stirring constantly.
2 Add the prawns (shrimp) to the saucepan and cook for 2-3 minutes to warm through.
3 Stir in the lemon juice and season with salt and pepper.
4 Divide the mixture into pots or jars, and cover each with enough clarified butter to form a thin, even layer. Allow to rest until set, or refrigerate until ready to eat. Serve with crusty bread or crackers.
