Makes 16
140g/5oz/⅔ cup butter
6 tbsp honey
170g/6oz/1 cup oats
60g/2oz/½ cup pistachios, chopped 3 tbsp pumpkin seeds
3 tbsp sunflower seeds
60g/2oz/½ cup dried apricots, chopped
60g/2oz/½ cup raisins
1 Preheat the oven to 170˚C/150˚C fan/325˚F/gas mark 3. Butter a 20cm/8in square baking tin and line with parchment paper.
2 Melt the butter and honey in a small saucepan over a low heat.
3 Combine the remaining ingredients in a medium bowl. Pour over the melted butter mixture and stir until everything is combined.
4 Spread into the prepared tin and bake for 35-40 minutes. Remove from the oven and score the bars with a large knife while still warm. When cool, remove from the tray and slice completely.
