BROWN BREAD
Makes 1 loaf
350g/12oz/3 cups wholemeal flour (wholewheat flour)
60g/2oz/½ cup plain flour (all-purpose flour)
1 level tsp bicarbonate of soda (baking soda)
1 level tsp salt
1 level tsp brown sugar
1 large egg, beaten
1 rounded tbsp black treacle (or molasses)
400ml/14 fl oz/1¾ cups buttermilk
1 Preheat the oven to 200˚C/180˚C fan/400˚F/gas mark 6. Grease the base and sides of a 900g/2lb loaf tin and sprinkle with flour.
2 Put all the dry ingredients into a large bowl and mix together.
3 In a separate bowl or large jug, mix together the egg, treacle (or molasses) and buttermilk until combined.
4 Pour into the dry ingredients and mix thoroughly with a wooden spoon.
5 Scrape the mixture into the prepared loaf tin. Slash the top along the centre with a knife so that it will crack evenly while cooking.
6 Bake for one hour, or until the bottom of the bread sounds hollow when tapped and a skewer inserted into the centre comes out clean. Cool the bread on a wire rack.
