SIMPLY SAVOURY RICE

Serves 4

1 litre/34 fl oz/4 cups water 375g/12oz/2 cups Basmati rice 150g/5oz/1 cup frozen peas

1 tbsp oil

2 chicken breasts, cut into bite-sized pieces

2 peppers (one yellow and one red), chopped

300g/11oz/4½ cups mushrooms, chopped

1 large onion, chopped

3 tbsp light soy sauce

1 tbsp Chinese 5-spice

1 tbsp Thai 7-spice

1 Bring the water to a boil in a saucepan. Stir in the rice and bring back to a boil, then reduce the heat and cover with a lid. Simmer for 12-15 minutes until cooked and the water is absorbed.

2 Stir the peas into the rice and cover with the lid. Leave for five minutes, then fluff with a fork.

3 Heat the oil in a frying pan over a medium-high heat and cook the chicken for 3-5 minutes, stirring frequently to brown on all sides.

Remove from the pan and set aside.

4 Add the peppers, mushrooms and onion to the pan and cook for 5-7 minutes until soft.

5 Stir in the soy sauce and spices. Add the chicken and rice mixture to the pan and heat through.
