“This is a great healthy family recipe. It’s lovely eaten as a main course if you add chicken. It’s also lovely with sweet chilli sauce, or you can serve it as a side dish with a curry. It’s a great dish to prepare in advance because you don’t add the rice until the very end. Whenever we have a family gathering this is always on the top of the list. Children love it and they don’t even realise they are eating vegetables because they are chopped so small.”
