POTATO WAFFLES WITH SMOKIN’ BAKED BEANS
Serves 4
2 tsp vegetable oil
1 onion, finely chopped
2 garlic cloves, crushed
1 tsp smoked paprika
400g/14oz/1½ cups chopped tomatoes 2 tbsp tomato purée (tomato paste) 2 tbsp caster sugar (superfine sugar) 400g/14oz/1½ cups cannellini beans Salt and black pepper
8 frozen potato waffles
1 Preheat the oven to 200˚C/180˚C fan/400˚F/gas mark 6.
2 Heat the oil in a pan over a medium heat, then add the onion and cook for three minutes. Add the garlic and paprika and cook for two minutes.
3 Add the chopped tomatoes, tomato purée (tomato paste) and sugar. Stir to dissolve. Stir in the beans and cook for 2-3 minutes to heat through. Season well with salt and pepper.
4 Place the waffles on a tray in the oven and cook for 10 minutes, turning once halfway through.
5 Serve the potato waffles hot with the beans on top.
