PEPPERONI PIZZA BURGER
Serves 4
60g/2oz/1 cup chorizo (Spanish-style smoked sausage), finely chopped 650g/23oz/1.5lb beef mince (ground beef)
60g/2oz/½ cup breadcrumbs
1 egg
3 tbsp fresh basil, finely chopped 2 garlic cloves, crushed
Salt and black pepper
1 tbsp oil
8 slices Mozzarella
8 slices pepperoni
30g/1oz/2 tbsp butter, at room temperature
4 burger buns
8 tbsp marinara sauce
To serve:
Rocket leaves (arugula) Cherry tomatoes, sliced
1 Combine the chorizo, beef, breadcrumbs, egg, basil, half of the garlic and a pinch of salt and pepper in a mixing bowl. Form the mixture into four burger patties.
2 Heat the oil in a frying pan over a mediumhigh heat and cook the burgers for 3-4 minutes on each side.
3 When cooked, top each burger with two slices of Mozzarella and two slices of pepperoni.
4 Mix the rest of the garlic with the butter and spread onto the buns. Toast the buns on a dry skillet until golden, then spread the marinara sauce onto them.
5 Add the patties to the buns and top each with rocket and cherry tomatoes.
