LUNCHBOX MUFFINS
Serves 6
1 tsp oil
½ red onion, finely chopped
½ red pepper, finely chopped 3 slices of ham, finely chopped 100g/3.5oz/1 cup mature Cheddar, grated
4 eggs, lightly beaten
1 tsp olive oil
125ml/4 fl oz/½ cup milk
½ tsp baking powder
Salt and black pepper
1 Preheat the oven to 200˚C/180˚C fan/400˚F/gas mark 6 and coat a 6-cup muffin tin with cooking spray. Heat the oil in a frying pan over a medium heat and cook the onion, pepper and ham for two minutes until softened.
2 Fill the muffin cups with the ham and vegetable mixture. Top each with some of the grated cheese.
3 Mix the eggs, oil, milk, baking powder, salt and pepper in a jug.
4 Pour the egg mixture into each of the muffin cups until they are almost full.
5 Bake the muffins in the oven for 20 minutes until they are golden brown.
6 Allow to cool for about five minutes before removing from the tin.
