Molloy’s Liquor Store, Tallaght


Originally a pub, set up in 1933 by Martin Molloy, Molloy’s

Liquor Store has been something of a pioneer in Irish business. In the ’60s, Martin’s son Kevin expanded the company to include one of the first off-licences. Since then, Molloy’s has become one of the most popular liquor stores around, with chains scattered across North Dublin.

Passed down to the third generation, its current director Richard Molloy has relaunched the original Tallaght store to accommodat­e the shift in the national palate when it comes to alcohol. Featuring displays from craft breweries such as Porterhous­e and the White Hag, it has specially distilled gin and tonic samples from Bristol’s 6 O’Clock Gin.

“Irish culture has changed and the economy has changed,” Richard says. “I’ve tried to keep the bread and butter older customers happy, while catering to newer crowds who want to get past Guinness and try new limited craft beers, gins, whiskeys and wines. The shops had always been in the back of our minds, since we were dealing with the pub mostly. But this store is the new model and we’ve really been focusing on it in recent months.

“It’s like the shift before – off-licences meant people could drink at home, so pubs struggled. Now the off-licence game is tricky, as supermarke­ts can sell at a lower price. So you have to consider carefully how to bring people in. This is my attempt, and we’ve been refurbishi­ng and prioritisi­ng Molloy’s exclusive wines, We bring them in ourselves to cut out the middle man and make it more affordable. Specialist stores are the ones succeeding now in the market, so what we are doing is creating three specialist stores in one.”

He stresses the importance of grabbing customers’ attention as soon as they enter.

“It’s all done on a visual level,” says Martin, pointing to the floors, which subtly shift in colour as you move between beers, wines and spirits. “You want to be informativ­e, but you want to simplify it for customers too. We’ll take care of the heavy lifting, so it’s easy and enjoyable on the other side of the counter.”
