Orig­i­nally es­tab­lished in 1966, Chez Hans is housed in a con­verted Vic­to­rian Gothic church, with ex­quis­ite art­works on the wall. The food is ex­cel­lent, with big ro­bust flavours al­lied to great ex­e­cu­tion of time­less clas­sics, es­pe­cially with the beef and pork which are sourced lo­cally. There’s also a Bib Gour­mand-win­ning Café Hans at the same lo­ca­tion, which is just down the road from the fa­mous Rock of Cashel.

This restau­rant and cook­ery school, run by Ail­ish and Enda Hen­nessy, is in a charm­ing con­verted farm­house in the coun­try­side out­side Ro­screa. The dishes are tra­di­tional, with hearty por­tions of poul­try, lamb and seafood to the fore, with a cou­ple of vege­tar­ian op­tions for good mea­sure. The recipes for Hen­nessy’s awe­some Beef Goulash and Beef & Guin­ness Casse­role can both be found on their web­site.

Close to Cahir Cas­tle, Lava Rock’s wellap­pointed din­ing room is set­ting high stan­dards in Mun­ster ever since its open­ing in 2014. This is where you go if you want a fan­tas­tic steak dish, cooked to per­fec­tion and served with cre­ative sides. We’re par­tic­u­larly en­am­oured with their dessert menu; the pas­try chef has real tal­ent.

A 20-minute drive from Lim­er­ick City, this beau­ti­ful vil­lage pub has been win­ning fans – and awards! – since 1987. The last time we came off the M7 at Exit 27 to visit them, Roast Poussin with Duck Fat Pota­toes, Roasted Veg & Red Wine Jus and Seared Fil­let of Sea Bass with Pancetta, Sam­phire & Can­nellini Stew were among the chalked-up spe­cials. Live mu­sic at the week­ends adds to the fun. If you’re stuck in the cap­i­tal and suf­fer­ing with­drawal symp­toms, fear not, there’s an­other Matt The Thresher at 31-32 Pem­broke Street Lower, Dublin 2.
