What’s your favourite thing about Ire­land? The friendly, sup­port­ive, warm peo­ple of Ire­land are my favourite thing about this coun­try.

Your favourite Ir­ish town?

Bal­ly­de­hob, where Restau­rant Chest­nut is! It is a small place – how­ever, you meet peo­ple from so many walks of life. It’s al­ways a hub of ac­tiv­ity.

Best view in Ire­land?

On my days off, I love go­ing for drives and hikes. The view from the top of the hill at Lough Hyne is amaz­ing. You can see the sur­round­ing is­lands and coast­line.

Your favourite restau­rant?

I have so many!. How­ever, if I have to choose, I re­ally love din­ing in For­est & Marcy in Dublin.

Best bar in Ire­land?

Our friends Caro­line and Joe have a won­der­ful, char­ac­ter- lled bar in Bal­ly­de­hob called Levi’s Cor­ner House. It has an old shop counter on one side where bands per­form. It’s great.

Favourite week­end re­treat?

We work ev­ery week­end, but our week­ends – Mon­day and Tues­day! – we love to get away to re­lax, around Ire­land.

Where do you shop for clothes?

If I am pass­ing Kil­dare Vil­lage, I pop in there!

Where do you pick up in­gre­di­ents for cook­ing? I use lo­cal sup­pli­ers who come to me, or I nd them in the lo­cal farmer’s mar­ket.

Favourite Ir­ish build­ing? The Glucks­man in Cork.

What do you rec­om­mend to tourists?

Ex­plore places off the beaten track that are not typ­i­cally tourist-y, to ex­pe­ri­ence an­other side of Ire­land. And eat in restau­rants all over Ire­land to ex­pe­ri­ence our won­der­ful cui­sine.
