What’s your favourite thing about Ireland? The friendly, supportive, warm people of Ireland are my favourite thing about this country.
Your favourite Irish town?
Ballydehob, where Restaurant Chestnut is! It is a small place – however, you meet people from so many walks of life. It’s always a hub of activity.
Best view in Ireland?
On my days off, I love going for drives and hikes. The view from the top of the hill at Lough Hyne is amazing. You can see the surrounding islands and coastline.
Your favourite restaurant?
I have so many!. However, if I have to choose, I really love dining in Forest & Marcy in Dublin.
Best bar in Ireland?
Our friends Caroline and Joe have a wonderful, character- lled bar in Ballydehob called Levi’s Corner House. It has an old shop counter on one side where bands perform. It’s great.
Favourite weekend retreat?
We work every weekend, but our weekends – Monday and Tuesday! – we love to get away to relax, around Ireland.
Where do you shop for clothes?
If I am passing Kildare Village, I pop in there!
Where do you pick up ingredients for cooking? I use local suppliers who come to me, or I nd them in the local farmer’s market.
Favourite Irish building? The Glucksman in Cork.
What do you recommend to tourists?
Explore places off the beaten track that are not typically tourist-y, to experience another side of Ireland. And eat in restaurants all over Ireland to experience our wonderful cuisine.
