Pure Drinking Chocolate

When our family was young, we shared many adventures and projects with

William Harcourt-Cooze, Clovis’s godfather, a man who always brought adventure into every project. He owned Horse Island and farmed sheep and later cattle there. Picnics on this tiny windswept island were always times of complete freedom.

He and his wonderful family enriched all those around them and now William’s son, Willie Harcourt-Cooze, is following very much in his father’s visionary way. He launched Willie’s Cacao, a business selling world-class eating chocolate. Willie’s company produces truly top-quality chocolate using the very finest beans sourced from his own farm in Venezuela and from single-farm producers in Cuba, Peru, Madagascar and Indonesia. We always have some in our cupboards plus the big 180g cylinders of Willie’s grating chocolate. The products in his range all provide a unique taste experience: new, very individual, intense flavours of 100% pure cacao. Grating it into warmed fresh milk is a wonderful thing!

Serves 2

INGREDIENT­S • 2 cups milk

• 2 tbsp 100% cacao chocolate from Willie’s Cacao range (and why not 3 tbsp?) • cane sugar, to taste

• Irish whiskey, to serve (optional)

METHOD Warm milk in a saucepan. Stir in the grated cacao chocolate and stir constantly until it is melted. Sweeten to taste. On a chilly night, why not add a tot of good Irish whiskey?
