There’s noth­ing nicer than a light meal like tacos on a Tuesday, or any day of the week re­ally, but I like the sound of Taco Tuesday! I made them this week with shrimp, the most im­por­tant part is the salsa you make with them, it needs to be fresh with lots and lots of lime. I bought the shrimps on skew­ers be­cause this meal was all about the de­li­cious salsa, so rather than investing my time in mar­i­nat­ing the shrimp, I fo­cused on the salsa. I use let­tuce as the wraps but you can use taco shells if you want. The best shrimp tacos I’ve had here in Dublin were in Taco Taco on Lee­son Street, check them out.


Shrimp Let­tuce for wraps rice for mix­ing in


5 cherry toma­toes, chopped Half an av­o­cado, chopped Scal­lions About 3 dessert spoons of corn from a tin 3 stems of co­rian­der (op­tional) Half a cu­cum­ber, chopped Chili, to your taste Half a lime Salt Pep­per

Rather than blend­ing the salsa, I just chop all of the in­gre­di­ents up, then squeeze the lime on top and then add the salt and pep­per. Then peo­ple can mix it how they like depend­ing on their tastes. So sim­ple!
