SHRIMP TACOS

There’s nothing nicer than a light meal like tacos on a Tuesday, or any day of the week really, but I like the sound of Taco Tuesday! I made them this week with shrimp, the most important part is the salsa you make with them, it needs to be fresh with lots and lots of lime. I bought the shrimps on skewers because this meal was all about the delicious salsa, so rather than investing my time in marinating the shrimp, I focused on the salsa. I use lettuce as the wraps but you can use taco shells if you want. The best shrimp tacos I’ve had here in Dublin were in Taco Taco on Leeson Street, check them out.

INGREDIENTS

Shrimp Lettuce for wraps rice for mixing in

SALSA:

5 cherry tomatoes, chopped Half an avocado, chopped Scallions About 3 dessert spoons of corn from a tin 3 stems of coriander (optional) Half a cucumber, chopped Chili, to your taste Half a lime Salt Pepper

Rather than blending the salsa, I just chop all of the ingredients up, then squeeze the lime on top and then add the salt and pepper. Then people can mix it how they like depending on their tastes. So simple!
