SALMON AND ASPARAGUS PASTA

Preheat the oven to 200C/180C fan/gas 6. Put a skinless salmon

fillet on to a piece of kitchen foil and squeeze over a little lemon juice. Scrunch up into a parcel and roast for 12 minutes. Meanwhile, cook dried pasta

shapes according to the pack instructio­ns, adding asparagus tips and long-stem broccoli for the last 4 minutes. Drain well. Mix fat-free natural fromage frais with the juice of ½ lemon and stir into the pasta and vegetables. Flake in the salmon, season to taste and serve with lemon wedges.
