Lee Sun specialise­s in bubble tea which, to be honest, is a bit of a closed book to me. I am told it originated in Taiwan about 40 years ago and while tea is the base, all sorts of other things can go in the mix, including condensed milk and cassava for thickening. The ‘bubble’ part refers to the ‘pearls’ of tapioca at the bottom. We stuck with bottled water, coffee and green tea, all of which were fine. I can’t quite figure out why there’s a row of cocktail shakers on the bubble tea bar but perhaps some people like theirs shaken, not stirred.
