BAKED HONEY FRENCH TOAST

SERVES 4-6

1 small loaf of challah or brioche bread or half of a large loaf, sliced

60g Boyne Valley Honey 375ml full fat milk

3 large eggs

METHOD

H Place bread into a large dish, ideally in a single layer.

H Whisk together the honey, milk, eggs, cinnamon and vanilla in a large jug. Pour the mixture over the bread and leave to soak for 15 minutes.

H Transfer the bread to an oven-safe dish. Pour over any remaining liquid that you soaked the bread in.

H Place the dish into the fridge for an hour or overnight.

H Preheat your oven to 180C

½ tsp cinnamon

1 tsp vanilla extract

FOR THE SAUCE

½ a small jar of raspberry jam or cranberry sauce 40g Boyne Valley Honey 1 tbsp boiling water

(350F). Bake the French Toast for 30-35 minutes.

H Meanwhile whisk together the sauce ingredient­s. Raspberry works perfectly but cranberry would be a beautiful addition on Christmas morning.

H Serve with some Greek yogurt, cream or even honey-sweetened mascarpone or ricotta cheese, some fresh berries and a dollop of that honey-infused fruit jam or sauce.
