Homemade granola

Serves 8-10

300g rolled oats

60g chopped hazelnuts

60g almonds flakes

40g sunflower seeds

40g pumpkin seeds

50ml sunflower oil

5 tbsp clear honey

1 tsp ground cinnamon

60g dried bananas chips, chopped

60g dried apricots, chopped 60g dried cranberrie­s

To serve:

Natural yoghurt and honey, to drizzle

Preheat the oven to 140C/gas mark 1. Lightly oil or grease a large, shallow baking tray with butter.

In a large bowl, mix together the oats, chopped hazelnuts, almond flakes, sunflower and pumpkin seeds.

In a small saucepan, heat the oil and honey over a medium heat, stirring constantly, until you have a smooth, runny consistenc­y. Pour this over the oats mixture and stir well.

Spoon the granola in an even layer on to the prepared baking tray, top with a sprinkling of cinnamon and bake for 30 minutes, stirring occasional­ly.

Add some or all of the dried fruit at this point (down to personal taste), and cook for a further 10-12 minutes.

Transfer to a large bowl and add the remaining dried fruit (if any). Mix well and leave to cool until ready to eat. Serve topped with natural yoghurt and a drizzle of honey.
