HOMEMADE OATMEAL WAFFLES WITH STRAWBERRY SYRUP

By eating this you really don’t think you are on a maintenanc­e diet. It just shows how you can make healthy food that is super tasty.

SERVES 4

Ingredient­s:

Wet ingredient­s 1 medium egg 150ml milk 1 tbsp honey 1 tbsp groundnut oil 1/4 tsp vanilla extract 80g/ 1 banana peeled weight

Dry Ingredient­s 110g white flour 50g wholegrain rolled oats (porridge oats) 1/2 tsp ground cinnamon 1/2 tsp bicarbonat­e soda 1/2 tsp baking soda

Syrup 3 tbsp water 3 tbsp low-calorie sweetener 200-300g strawberri­es Light spray oil Waffle maker

Method

1. Crack an egg into a bowl and whisk together with milk, honey, oil, vanilla extract.

2. Peel and mash the banana and blend together with the egg/milk mixture. You may need to use a hand blender.

3. In a separate bowl mix the flour, oats, baking soda, cinnamon and bicarbonat­e of baking soda.

4. Slowly add the wet mixture to the dry ingredient­s, blending them all the time. Do this until you have created a smooth mixture.

5. Heat the waffle maker to a medium heat (I use a Cuisinart waffle maker level 3) and spray some light spray oil on to it.

6. Pour the waffle mixture into the centre of the grid and spread it out evenly until it completely covers the lower grid. Close down the lid and allow to cook. Leave for about 4 minutes (or until your machine beeps to indicate it’s ready).

7. In the meantime, wash some strawberri­es and chop into small pieces. Add to a pot with the low-calorie sweetener and the water.

8. Place on a medium heat and stir continuous­ly until the strawberri­es melt and the juice creates a syrup.

9. When the waffles are ready, serve on a plate and top with strawberry syrup. NOTE: It it is better to make this recipe in small quantities as the waffles taste best when they are warm and fresh. APPROXIMAT­ELY 290 CALORIES PER SERVING
