Cider herbed salmon

4 salmon fillets 240ml cider 60ml soy sauce 60g butter 2 garlic cloves, crushed 1 bay leaf 1 tsp rosemary 1 tsp thyme 1 tsp pepper 1 red onion, thinly sliced To serve: Green salad Mashed potatoes 1 Place the salmon fillets in the bottom of a baking dish. Mix the remaining ingredients until well combined and pour over the salmon. Leave the salmon to marinate for at least 15 minutes. 2 Preheat the oven to 190°C/170°C fan/gas mark 5 and transfer the salmon to a baking tray lined with tin foil. Bake for 20-25 minutes until thoroughly cooked. Serve the salmon with a green salad and mashed potatoes.
