THIS WEEK I’LL BE EATING...

Leeks from the garden. I deliberate­ly grow slim, elegant leeks (a variety called King Richard) instead of the big fat ones that have much less flavour. All leeks are really easy to grow, but they take time and are worth the wait. I trim and slice them and just sweat them in butter, at their simplest. Or I will mix them with beaten egg, plenty of cheese and some fried bacon bits and bake in the oven until set.

THE INSIDE STORY

I think we all know by know that this is Veganuary, part of an internatio­nal campaign to persuade us to abandon not just meat but all animalderi­ved foodstuffs such as eggs and dairy – even honey. However, if that doesn’t float your boat, it’s also Organuary, a month devoted to the consumptio­n of offal. It’s UKbased but relevant everywhere as this form of meat often goes to waste. BIG LOSSES LEAVE A SOUR TASTE

We have lost two great restaurant­s in recent weeks. Conor Dempsey’s Amuse on Dawson Street in Dublin is no more. His cooking — strongly influenced by Japan — was stunning, his dishes like jewels on the plate. And The Mews in Baltimore, West Cork, having won a Michelin star last year, has likewise decided that it won’t be reopening. Of course, Dublin rents are a serious issue. If If they continue to rise, the only restaurant­s left will be the likes of The Ivy and McDonald’s.

IN VINO VERITAS...

The opening of the Aldi store in Laytown, Co Meath, that I mentioned a while back has been slightly delayed but I will, as promised, be there to advise on the choice of wine. I’ll keep you posted as to when it happens and perhaps you can save up some oenologica­l questions for me. Whether it’s finding the ideal partner for a particular dish, getting the best value in fizz or just expanding your wine horizons, I’ll be very happy to help!
