Courgetti arrabbiata

1 large courgette, ends chopped off
1 tsp extra-virgin olive oil
Pre-made sofrito sauce (see below)
½ tsp chilli flakes
1 tsp dried oregano
Handful of fresh basil leaves, roughly chopped, and some more to garnish
Black pepper USE a spiraliser to shred the courgette into ‘courgetti’ spirals. Place the oil in a frying pan over a medium heat. Spoon half of the sofrito sauce into a microwaveable bowl and add the chilli flakes, oregano and fresh basil. Heat on high for a couple of minutes, stirring part-way through. Meanwhile, add the courgette to the pan and stir-fry for about 5 minutes, until soft. Stir the sauce into the courgetti, scatter some basil leaves on top and finish with a grinding of black pepper.
NO SPIRALISER? If you’d rather, simply cook the courgettes and stir them into 1 tsp of pesto paste.
