Chicken Noodle

INGREDIENT­S:

1 chicken breast fillet

900ml chicken stock

4 spring onions

1 red pepper

6 baby sweetcorn

75g mangetout

6 mushrooms, chopped

1 garlic clove, crushed

75g medium rice noodles

2 tsp soy sauce

1 chilli, finely diced

Fresh coriander, chopped

Fresh lime

METHOD

1. Place the stock in a large saucepan with the chicken, garlic and ginger and bring to boil. Simmer for 20 minutes or until the chicken is cooked through. Remove the chicken and roughly chop into bite-size chunks. Return the chicken to the stock along with all the other ingredient­s and cook until the vegetables and noodles are tender, maybe 4-5 minutes.

2. About a minute before the end add the chopped spring onion. Serve immediatel­y, in large bowls, garnished with fresh coriander, chilli and a squeeze of lime.
