Former Miss World set to study for Masters degree in nutrition

ROSANNA Davison has already proved she’s got brains and beauty and now the ex-miss World plans to spend the New Year studying for more qualificat­ions.

The Dublin model, 32, has revealed she is gearing up for a Masters degree in nutrition and admitted she is getting flack from some friends who think she is “mad” embarking on another course.

But the self-confessed nerd is dying to get stuck into the books again.

Rosanna, who admitted it’s going to be tough to juggle her career and studies, told the Irish Mirror: “I’m starting my masters in nutrition mid-january, it’s just another thing to fit in.

“I’ll still be working on other things but this will mean getting up earlier and working evenings and weekends so it’ll be hectic but I’ll pencil it in and see how I get on.”

The hard-working daughter of crooner Chris De Burgh told how furthering her education is important to prove she’s got the qualificat­ions to be an expert in her field.

She said: “The University of Middlesex offers online learning so all the lectures are recorded so I can catch up and log on when I have time.

“You have to make yourself do it, that’s the thing.

“It’s something I’ve always wanted to do, it’s just a year long so I’m going to get stuck in.

“You never regret it anyway, you have the qualificat­ion for life and more letters under your name and nobody can take it away from you. I finished up my last course in 2013 so it’s a few years that I haven’t studied.

“Then again sitting down to write books and having this discipline is not that far removed but I guess I missed it this year because I haven’t been doing either, I’m sure it’ll be fine.”

Rosanna said her peers are as always supportive but wonder why she feels the need to dedicate her life to more study.

She admitted: “Yeah, they think I’m mad, they don’t know why I’m doing it, but it just means in the future for things like writing books and holding seminars and working abroad with the hotel group The

“It means that I have the extra qualificat­ion for working with people on that level plus I’d love to do more bootcamp-style stuff with the hotels.

“l’ll be over in the hotel group’s flagship hotel in Mauritius in March working on their summer menus, I just wrapped on organising their festive menus.” Ahead of her gruelling New Year schedule which not only sees her modelling, running her website, designing healthy menus for the Constance Hotel Group and studying, Rosanna is jettting off on holiday with husband Wes Quirke.

She said: “We’re just going to Dubai for a bit of winter sun so we’re looking forward to it, we booked it way back in November and it’s come around so quickly.”

As for showing off her svelte figure in the sun, the former Playboy bunny added she enjoyed snacking over the festive season but got quickly back into her fitness routine so her bikini body is intact. She said: “I did Model is health guru

of course overindulg­e over Christmas, it was more the savoury stuff, crisps dips, stuffing.

“I made Chocolate Cheesecake from my book Eat Yourself Fit, brownies and chocolate truffles on Christmas Day.

“But I made myself go back to the gym the day after Stephen’s Day and I’m back into it now.

“Christmas is so tiring anyway with the build up to it and all the adrenaline but I find if I take too many days off then it’s really hard to get back into it.”

Following the success of Eat Yourself Beautiful and Eat Yourself Fit the wheels are in motion for a potential third book.

Rosanna added: “I’d love to write another book in the next few years, I have spoken to a publisher about it but I guess it’s trying to come up with a topic that everyone is interested in.

“I’m not necessaril­y going to do another cookbook but it would just be a matter of figuring out what kind of book it would be.”

The health guru advises slowly returning to fitness regimes.

She explained: “Ease yourself back into it, it’s great to indulge and have a break and everyone does it.

“Get out for a walk every day, getting a little bit of fresh air and exercise works wonders as does drinking more water.

“After the celebratio­ns it’s good to give your system a break and enjoy the New
