SWEET POTATO AND PANEER CURRY
PANEER is a lightly pressed Indian cheese. If you can’t find it in supermarkets, use halloumi or a firm tofu. Delicious served with naan bread and rice. Serves 4.
METHOD
INGREDIENTS
1 tbsp vegetable oil
1 onion, chopped
2 garlic cloves, crushed
500g sweet potatoes, peeled and cut into chunks
1 tbsp mild curry powder
1 tbsp finely chopped fresh root ginger
400g can chopped tomatoes 100ml vegetable stock 150g shelled fresh or frozen peas
250g paneer, cut into 1.5cm cubes
2 tbsp chopped fresh mint
