World award for Macroom buffalo cheese
Winning gold at the World Cheese Awards, for the second year in succession, shows the success of Macroom buffalo mozzarella in its three years of production.
Ricotta, from Johnny and Geraldine Lynch’s buffalo herd, in Cill na Martra, also got a bronze award at the same competition. And Macroom buffalo ricotta picked up two stars at this year’s UK Great Taste Awards.
Using whey, a byproduct in the making of mozzarella, buffalo cream is then added to make the ricotta. It is a cheese used in cheesecakes, lasagne, ravioli, and other pasta dishes.
Musgraves stock it, and it is also available at farmers’ markets.
