Dr Stephan Pe­ters from the Dutch Dairy Coun­cil warned that the prin­ci­ple of eat­ing fewer an­i­mal-based foods and more plant-based foods was of­ten an over­sim­pli­fied so­lu­tion and, in some cases, it even in­creased the en­vi­ron­men­tal foot­print of the diet. He told a sym­po­sium in Dublin that nu­tri­tional ad­e­quacy, food pro­cess­ing and air-miles also needed to be con­sid­ered. “Not eat­ing too much, eat­ing less meat, and eat­ing lo­cally pro­duced, sea­sonal foods are im­por­tant.”
